build: Fix -Wconversion warnings for fpclassify et al

closes #8274

- Instead of #undef and re-#define, define "xfoo" wrappers to avoid
  include-order sensitivity.
- The warnings are bogus, caused by bad interaction between glibc and
  clang 6+.
